Recipe for Garlic Smashed Potatoes:

Ingredients Needed:

10-15 baby potatoes (keep skin on⁣⁣)

Salt and pepper to taste ⁣⁣

Garlic powder (about 1/2 teaspoon)⁣⁣

Olive oil to drizzle ⁣⁣

Melted butter (about 1 tablespoon)

Optional - dried rosemary or parsley flakes for seasoning

Servings Made: 3-4 servings

Time to Prep: 5 minutes

Time to Cook: 20 minutes (air fry method), 45 minutes (baking)

How to Make:

Boil potatoes in a pot of salted water until soft.

Pro tip - place raw potatoes in cold water to boil not already boiling water. This will make sure your potatoes cook evenly rather than being raw inside and mushy on the outsides.

Drain water and let potatoes sit in colander for about ten mins to dry out completely.

To bake in oven - Place potatoes on parchment lined baking tray and gently smash them flat with large fork. You want to try to keep the potato in tact when smushing. Drizzle them with olive oil and or melted butter (I use both!) and sprinkle on salt, pepper, garlic and parsley flakes. Bake at 400° F for about 35-40mins. Remove halfway during baking and spray with olive oil or brush with olive oil/melted butter. This makes them nice and crispy!

To air fry - Place boiled potatoes on a flat surface and gently smash them flat with a large fork. Try to keep them in tact when smashing. Place smashed potatoes in a single layer in a greased air fryer basket. Drizzle them with olive oil and or melted butter and sprinkle on desired seasonings. Air fry at 400° F for about 5-7 minutes depending on the size of the potatoes. About halfway through cooking, flip potatoes over and spray with ore olive oil or brush with olive oil/melted butter.

Serve with sour cream or any other dipping sauce you wish.

Enjoy!
