Date Cake

I have to admit that this cake was so delicious that I wasn’t able to keep my family away from it before I took a photo of it! Trust me when I say you must make this cake.

I am not a fan of dates and this cake is my new favorite cake flavor hands down. It is a simple recipe that doesn’t involve any complicated equipment or steps, perfect for bakers of all levels.

Recipe for Date Cake:

Ingredients Needed:

1 ½ cups boiling water

1 cup pitted and chopped dates

1 teaspoon baking soda

1/2 cup room temperature butter (salted)

3/4 cup granulated sugar

2 eggs

2 teaspoons vanilla

Pinch of salt

1 teaspoon baking powder

1 ½ cups flour

1/2 cup chopped walnuts

Optional glaze

3 tablespoons melted butter

1/2 cup chopped walnuts

1/4 cup brown sugar

3 tablespoons heavy cream or whipping cream

Servings Made: 1 cake 9x13 in size

Time to Prep: 10 minutes

Time to Cook: 35-45 minutes

How to Make:

Preheat oven to 350°F. Line a 9x13 cake pan with parchment paper.

In a medium heat safe bowl, mix dates, baking soda and boiling water. You can use a wooden spoon or hand whisk. Be careful not to burn yourself. Set bowl aside.

In another large bowl, cream together butter and sugar for 2 minutes. Use a handheld electric mixer on medium high speed. Add in eggs and vanilla, mix. Add salt, baking powder and flour. Mix until just combined. Add in date mixture that you previously prepared along with chopped walnuts. Use a spatula to combine together.

Pour batter into prepared cake pan. The batter is quite runny so be careful when pouring.

Bake at 350°F for about 40 minutes until a toothpick comes out clean with a few moist crumbs on it. Cool completely on wire racks before removing from pan.

Optional glaze - when cake comes out of the oven, carefully use a toothpick to poke about 10-15 holes into the cake. This helps the glaze to enter the cake.

Mix melted butter with chopped walnuts, brown sugar and heavy cream. Mix well and pour evenly over top of baked cake.

Allow cake with glaze to cool completely on wire racks before serving.
