Potato Beef Pies

I loved these pies growing up. My Mom used to keep them in the freezer so we could bake them up whenever we wanted. I had to convince her to teach me how to make them so I could make them for my kids! Although if I am being honest, I think she was happy to teach me so she didn’t have to make them for me anymore ;)

My son loves taking these for his school lunches and I love them as a late night snack! Try these with my green chutney or a healthy dose of Franks red hot sauce.

These are made with store bought pastry sheets and frozen hash brown potatoes so they come together really fast!

Recipe for Potato Beef Pies:

Ingredients Needed:

One medium onion diced⁣⁣

Two tablespoons oil ⁣⁣

2-2 ½ lbs ground beef⁣⁣

1/2 tablespoon minced garlic⁣⁣ or garlic paste

1/2 tablespoon blended ginger ⁣⁣or ginger paste

1 teaspoon black pepper ⁣⁣

1/2 to 1 teaspoon salt or to taste ⁣⁣

1 teaspoon onion powder *optional ⁣⁣

1 small bunch green onions chopped⁣⁣

1 medium green pepper diced and seeds removed

1/2 package frozen hash browns (about 1 lb) ⁣⁣*Do not thaw them

3-4 tablespoons thick teriyaki marinade or similar sauce ⁣⁣

2 ½ - 3oz HP sauce or A1 steak sauce or similar ⁣⁣(my Mom uses HP sauce and I prefer it but I find it hard to get in the States)

Siracha or Franks red hot sauce to taste (you can also use cayenne powder to taste) ⁣⁣

Frozen puff pastry sheets ⁣⁣(2-3 boxes, each box usually has 2 sheets inside)

1-2 eggs beaten for brushing on top of pies

Servings Made: 18-24 pies (depending on how much filling you put in each one)

Time to Prep: 10-15 minutes

Time to Cook: 30 minutes plus time to assemble pies

How to Make:

Heat oil in large pot over medium high heat and cook diced onion until lightly browned. Add ground beef, garlic and ginger and cook until liquid is gone and beef cooked (about 15-20 minutes). Use a meat masher or wooden spoon to break apart beef to small pieces. Add salt, pepper, onion powder, teriyaki sauce and HP sauce. Taste mixture and add salt, hot sauce, or cayenne powder if needed.

Stir well and turn stove top off. Add the frozen hash browns and stir to combine. Wait until mixture has cooled slightly then add diced green peppers and green onions and mix well. ⁣

Follow instructions for using and defrosting pastry on the box. Roll out pastry with rolling pin if needed and cut into squares. I don’t roll mine out as I like the extra layers of pastry! I just cut each sheet into 4 squares.

Pro Tip

Don’t completely thaw out the pastry or it will be too sticky and not form pies well. I like to work with the pastry when it is still sightly frozen and unfolds well but doesn’t crack. 

Place a tablespoon or more of beef mixture in the middle of each pastry. Use a pastry brush to brush beaten egg along edges of pastry. Fold corners together to make a triangle, gently press edges to stick.

Pro tip - Flour the surface you are working on to avoid the pastry sticking. If your pastry is too sticky or thawed too much ,then place it back in freezer for a few minutes to harden up again.

Place pies flat on a parchment paper lined baking tray and brush egg wash on top of pie. Use a fork to seal sides shut. 

These can be baked in the oven at 375 - 400°F for about 15-20 minutes until golden brown, or you can freeze them and simply bake from frozen in the oven as directed above. You may need to bake a few minutes extra when baking them from frozen. ⁣These can also be air fried as well.

Pro tip

Make extra pies and freeze them flat in freezer bags to bake up fast when you need them for a quick dinner or lunch.
