Coconut Jam Thumbprint Cookies

I must admit anything baked with coconut is a winner for me. These cookies are no exception. They are buttery, soft and loaded with coconut inside and out!

The coconut on the outside of the cookies toasts up in the oven too which I love.

You can always omit the coconut inside/outside if you aren’t a fan (or allergic) and just make them jam thumbprints. They are delicious regardless!

Recipe for Coconut Jam Thumbprint Cookies:

Ingredients Needed:

1/2 cup plus 1 ½ tablespoon butter softened (room temperature)

1/2 cup granulated sugar

1 teaspoon baking powder

1/4 cup fine ground semolina (sooji) *you can omit this and just use 1 ½ cups flour for the entire recipe instead of 1 ¼ cups as listed below

1 egg

1 ¼ cups all purpose flour

1 teaspoon vanilla

1/4 cup shredded coconut (I use unsweetened) plus a few tablespoons to roll cookies in

Jam for topping (about 1/4-1/2 teaspoon per cookie)


Servings Made: 25 cookies

Time to Prep: 10 minutes

Time to Cook: 20 minutes

How to Make:

Preheat oven to 325°F. Line a few baking trays with parchment paper. Cream butter and sugar together with an electric mixer (about 3 minutes) until mixture looks lighter in color and fluffy.

Add flour, semolina, coconut and baking powder. Mix well and add vanilla. Mix until loose dough forms. Finally crack in the egg and mix.

Place a few tablespoons of coconut in a shallow dish. Using your hands, form small balls of dough and roll them in the dish of coconut to coat evenly. Place on baking tray about 2 inches apart. Use your fingers or the back of a small measuring spoon to create a small cavity in the centre of the cookie.

Fill the centre of the cookie where you created the cavity with jam.

Bake for 16-18 minutes until edges are lightly browned. Cool completely on wire racks.

These cookies freeze well after baking. You can store them in an airtight container or freezer bag for up to a month.

Pro tip - Try a variety of jam flavors for these cookies. I love raspberry but any kind would work!
