Holiday Energy Bites

These bites are a fun festive version of my classic peanut butter energy bites. These are kid and adult approved!

I love having these on hand for when I need an afternoon pick me up. Making these over the holidays with the family is a great activity and you end up with a yummy snack.

Pro Tip

You can use a variety of milk types in this recipe. Almond, soy, lactose free and dairy milk all work well.

You can also use a variety of nut butters. Cashew, sunflower seed, peanut and almond butter all work well.

 

Recipe for Holiday Energy Bites:

Ingredients Needed:

3/4 cups rolled oats

1/4 teaspoon ground cinnamon

1/2 teaspoon chia seeds

1/2 teaspoon ground flaxseeds *Optional

1 tablespoon honey

3 tablespoons chocolate chips

3 tablespoons almond milk (see pro tip above for subs)

1/4 cup peanut butter (see pro tip above for subs)

1 tablespoon shredded coconut

2 tablespoons mini marshmallows cut into quarters

2 teaspoons festive sprinkles

Servings Made: 15 mini bites

Time to Prep: 5 minutes

Time to Make: 10 minutes plus 1-2 hours to chill in fridge

How to Make:

Mix all ingredients in a large bowl except for the milk. Use your hands or a spoon to mix. When all ingredients combined, gradually add the almond milk until the mixture is sticky and begins to come together to form balls. You may need more or less milk.

You want to be able to form a solid ball with the mixture as you press it together with your hands.

Pro tip - If it is quite warm in the room you are in, place the mixture in the fridge for about 20 minutes. This will help form the bites.

Once mixture is ready, form bites in the shape of small balls and place on wax or parchment lined trays in the fridge or freezer to set. You can roll the bites in more sprinkles or coconut if desired.

These bites can be stored in the fridge for up to 3 days or in the freezer for up to 30 days.
