Peanut Butter Energy Bites

Nothing fancy about these energy bites. They are made in one bowl just with a spoon.

I keep a batch of these in the freezer for on the go snacking (I love eating them cold). My son also loves taking these to school so we make some up with a nut free butter and omit the protein powder to make them kid friendly and lunchbox approved.

 

Recipe for Peanut Butter Energy Bites:

Ingredients Needed:

1 ½  cups rolled oats

1/2 teaspoon ground cinnamon

1 teaspoon chia seeds

2 tablespoons honey

1/3 cup semisweet chocolate chips

6 tablespoons almond milk*

1/2 cup creamy peanut butter**

Optional - A few tablespoons unsweetened shredded coconut to roll bites in, 1 teaspoon ground flaxseeds, 1-2 scoops chocolate protein powder (omit protein if making for kids)

*You can use a variety of milk types in this recipe. Almond, soy, lactose free and dairy milk all work well.

**You can also use a variety of nut butters. Cashew, sunflower seed, peanut and almond butter all work well.

Servings Made: 18-24 bites

Time to Prep: 5 minutes

Time to Make: 10 minutes plus 1-2 hours to chill in fridge

How to Make:

Mix all ingredients in a large bowl except for the milk and the shredded coconut for rolling. Use your hands or a spoon to mix. When all ingredients combined, gradually add the almond milk until the mixture is sticky and begins to come together. You may need more or less milk (depends on the type of oats and protein powder you used).

You want to be able to form a solid ball with the mixture as you press it together.

Pro tip - If it is quite warm in the room you are in, place the mixture in the fridge for about 20 minutes. This will help form the bites.

Once mixture is ready, form bites into the shape of small balls. Roll in coconut if desired. Place on wax or parchment lined trays in the fridge or freezer to set.

These bites can be stored in the fridge for up to 3 days or in the freezer for up to 30 days.

Pro Tip

Change up the flavor of these bites by adding white chocolate or yogurt chips to the mixture!

You can also add vanilla extract and a scoop of vanilla protein powder to the mix.
