Oatmeal Almond Flour Cookies

These cookies are perfectly sweet and bake up nice and soft on the inside. Just like an oatmeal cookie should be! You will not find any hidden raisins in this recipe, but if you like them (but why?!!) then feel free to add them in.

These cookies freeze well after baking so you can make extra and keep them in the freezer for a quick treat.

Recipe for Oatmeal Almond Flour Cookies:

Ingredients Needed:

1 cup plus 1 tablespoon almond flour

1/2 teaspoon salt

1/4 teaspoon baking powder

1/2 teaspoon cinnamon

6 tablespoons maple syrup

1/4 cup applesauce

1 egg

1 teaspoon vanilla

1/2 ripe banana mashed

3/4 cup rolled oats

1/2 cup chocolate chips

Other optional add ins - coconut, chopped nuts, dried cranberries, raisins

Time to Prep: 10 minutes

Time to Make: 15 minutes plus about 30-45 minutes inactive time to chill

How to Make:

Preheat oven to 375°F and line a few baking trays with parchment paper. In a small bowl, mix flour, salt, cinnamon and baking powder. Set aside.

In another bowl, whisk maple syrup, egg, applesauce, vanilla and mashed banana. When combined well, add this to your bowl of dry ingredients from the first step.

Use a wooden spoon or spatula to mix well and then fold in chocolate chips and oats gently. Chill this mixture for at least 30 minutes in the fridge.

Using a cookie scoop or tablespoon, drop 1-2 tablespoons of cookie dough onto your lined baking trays about 2 inches apart. Bake for 14-16 minutes until golden brown. Cookies will be slightly soft but will harden as they cool. Make sure you cool them to room temperature before serving.
