Mini Pancakes
Breakfast is literally my favorite meal of the day and pancakes are a must for me. These mini bite sized pancakes are a twist on the old silver dollar pancakes I had as a kid. I saw these all over the internet marketed as “pancake cereal” a few years ago. What a great idea! You could literally eat these with a spoon in a bowl…and I have!
They are a bit time consuming to make but worth the time in my opinion!
Another way to enjoy these are in fun shapes like hearts for festive occasions, or stack them up with a berry on top and put a toothpick through them for a fun brunch idea! Serve with small bowls of syrup, chocolate sauce, or whipped cream to dip them in.
Pro tip - Get a squeeze bottle to make these. If you don’t have a squeeze bottle to make the mini shapes, use small measuring spoons like 1/4 and 1/2 teaspoons to pour the batter. It will take longer, but will definitely work.

Recipe for Mini Pancakes:
Ingredients Needed:
1 box of pancake mix (you won’t need the entire box. See my note below for the servings made)
Toothpicks if you are making mini pancake stacks
Toppings - fresh berries, butter, syrup, powdered sugar, chocolate sauce, whipped cream.
Servings Made: Varies depending on how much of the box mix you make and how large you make the minis. Usually one cup of the dry mix will make about 6-7 medium sized pancakes or about 60-80 minis.
Time to Prep: 5 minutes
Time to Cook: 15-20 minutes
How to Make:
Prepare pancake mix as per box instructions. Fill plastic squeeze bottle about 2/3 full with pancake mix. Don’t fill all the way as the mix expands in the bottle and will ooze out the top creating a sizable mess.
Heat fry pan or griddle and make sure to grease it with oil, butter or cooking spray.
Using the squeeze bottle or small measuring spoons, make small round coin sized pancakes on the heated pan (or whatever your desired shape is). When small bubbles appear on the tops, flip each one over using a flipper or even a fork.
Remove pancakes from griddle or pan and place on serving dish.
Pro tip - cooked pancakes freeze really well. Make a whole bunch, allow them to cool down and place them in zipper top freezer bags for when you need them. Just heat them up in the microwave before serving.
Top with desired toppings or stack up into mini pancake towers using toothpicks and dip away.
