I have been known to make a tray all for myself for dinner, and if I’m being honest, these make a solid bedtime snack also!

Recipe for Mini Pepper Pizzas:
Ingredients Needed:
10-15 mini peppers cut in half lengthwise and seeds removed
Shredded cheese (about 1-2oz total)
Pasta or pizza sauce (1/4-1/2 teaspoon per pepper)
Toppings such as pepperoni, cooked ground beef
Oregano and red chili flakes if desired
Servings Made: 2-3 servings
Time to Prep: 5-10 minutes
Time to Cook: 7-10 minutes
How to Make:
Preheat oven to 400°F.
Arrange cut peppers on a parchment lined baking tray in a single layer. Put pasta or pizza sauce in each half, top with chopped pepperoni slices and a some shredded cheese.
Season tops with a sprinkle of oregano and red chili flakes if desired. Bake for about 10mins at 400°F or until cheese melted.
Pro tip - experiment with other toppings like ground beef, pineapple, basil and more!
