One Pot Creamy Broccoli Pasta
I love meals that can be made in one pan or pot. Sheet pan dinners, one pot pastas, rice dishes etc. I love being able to throw all the ingredients in the same pot because it means easy clean up and less dishes to wash :)
Did I mention this dish takes less than 30 minutes to make? Make it with your choice of pasta (we love bow ties for this) and veggies. Make this one your own!
Recipe for One Pot Creamy Broccoli Pasta:
Ingredients Needed:
12 oz pasta uncooked
2 teaspoons minced garlic
2 tablespoons butter
2 tablespoons olive oil
2 teaspoons oregano flakes
Pepper to taste
1/2 teaspoon paprika
1 teaspoon Italian seasoning
3-3 ¼ cups very hot or boiling water
1 head broccoli cut into florets
2 tablespoons cream cheese
Salt to taste
1/2 cup heavy cream
3/4 cup milk
1 cup grated or shredded parmesan cheese
1-2 tablespoons fresh parsley or 1 teaspoon dry parsley flakes
Optional – red chili pepper flakes to taste, shredded parmesan for topping
Servings Made: 4-6 servings
Time to Prep: 5 minutes
Time to Cook: 25 minutes
How to Make:
In a large pot, melt butter and olive oil together. Once melted, add minced garlic and cook until the garlic is fragrant (1-2 mins).
Add in seasonings (oregano, pepper, paprika, salt and Italian seasoning). You can also add a few red chili pepper flakes for spice if you wish.
Cook for another 2-3 mins and then add boiling or very hot water (about 3 ¼ cups) and dry pasta. Stir well and boil about 9-11 mins until pasta almost cooked through. Add broccoli florets into pot halfway during pasta cooking time, stirring occasionally.
When pasta cooked, add milk, heavy cream and cream cheese. Stir well. Allow it to come back up to a boil, then turn heat down to low and cook for another 5-7 mins to allow sauce to thicken.
Turn off heat and stir in parsley and parmesan cheese.
Top with more parmesan cheese and serve.
Enjoy!
