Zoodle Stir Fry (Zucchini Noodles)
Zoodles zoodles all day long! Zoodles = Zucchini noodles.
This recipe is a great quick meal idea for you to make. And if zucchini isn’t your thing, then skip the zoodles and just use any other noodle (spahgetti, egg noodles…you pick).
Pro tip - get a spiralizer to make these zoodles. I use mine all the time! You can use it for so many other things too.
Recipe for Zoodle Stir Fry:
Ingredients Needed:
1/2 red onion chopped
2 peppers chopped and seeds removed
1 large handful of sugar snap peas (strings removed)
2 chicken breasts chopped into 1/2-1 inch pieces
3-4 large zucchinis spiralized
1/2 cup chicken or vegetable stock
Siracha hot sauce or chili garlic sauce to taste
1 tablespoon corn starch *can add more if needed to thicken sauce
1 tablespoon each garlic and ginger paste
1/4-1/2 cup soya sauce or coconut aminos (I use low sodium soya sauce usually)
1/2 tablespoon rice wine vinegar
2 teaspoons sesame oil
2-3 tablespoons oil
1-2 Thai chilies *Optional for spice, or you can use red chili flakes to taste
Salt and pepper to taste
Servings Made: 3-4 servings
Time to Prep: 15 minutes
Time to Cook: 15-20 minutes
How to Make:
Prepare sauce by mixing stock, soya sauce, siracha, garlic, ginger, sesame oil, rice wine vinegar, and corn starch together in a small bowl. Use a hand whisk.
Pro tip - You can prepare the sauce the night before and store in airtight container in fridge. I like to add all my sauce ingredients into a mason jar and close the lid, shake it up and store in the fridge until I am ready to use it. Just make sure to shake well before using.
Season chicken pieces with some salt and pepper and set aside.
Heat oil over medium high heat in a large wok or fry pan. When oil is hot, add Thai chilies and sauté for a few minutes. Then add chicken and cook for a few mins on each side.
Pro tip - you can use prawns if you like here as well.
Add chopped veggies to your pan and cook until they soften. When veggies are cooked to your liking, shake up your sauce and add it to your pan. Stir together for a few mins until chicken is cooked through. Use a meat thermometer to check for doneness.
Once chicken is cooked, add zoodles. You don’t need to cook the zoodles long in the pan, maybe 1-2 mins only. If you prefer to use another type of noodle, the process is still the same just make sure the noodle you use is cooked before adding to the pan.
Serve with sesame seeds on top.
