Zucchini Soup

This is a simple 5 ingredient soup that is sure to please everyone! I actually used to make this soup for my first born when he was starting solids (minus the salt and I used low sodium broth). He loved it. I used to freeze the soup into those baby cubes or ice cube trays and take them out when needed. Any parents looking for some food ideas for babies...here is one!

But, this soup is not just for babies! I make it a lot now as it comes together so fast and disappears just as fast. You know this soup is a winner when my picky husband eats it and asks for more.

Pro tip - an immersion blender is a must for soups. I use mine a lot (I have had mine over 10 years, it was a wedding gift). I linked the newer model one as mine is no longer available. The immersion blender saves time when cooking, and reduces chances of burns when transferring hot soups to the counter top blender.

 

Recipe for Zucchini Soup:

Ingredients Needed:

3 zucchinis roughly chopped into 1/2 inch sections

1/2 medium onion diced

Salt and pepper to taste

4 cups chicken or vegetable stock

1 teaspoon minced garlic

2 tablespoons sour cream

1 tablespoon butter

Servings Made: 4 cups of soup

Time to Prep: 5 minutes

Time to Make: 30-40 minutes

How to Make:

Heat butter over medium heat in a large pot. Add onions and garlic and sauté for a few mins until onions soften and garlic is fragrant. Don’t overcook or the garlic will burn.

Add stock and zucchini pieces and season with salt and pepper. Don’t add too much salt now as the stock usually has enough. Wait until the end to taste the soup and you can add more then if needed then.

Turn up heat and bring soup to a boil. When boiling, turn heat back down to low and let soup simmer for about 25-30 mins until the zucchini is tender.

Turn off heat and use immersion blender to blend to your desired consistency. You can use a counter top blender as well but be careful as soup will be hot when transferring. When blended, stir in sour cream and serve. You may need to whisk the sour cream in to blend it well.
