Banana Oatmeal Pancakes
I have tested sooooooo many “healthy” pancake recipes over the years. This one is my clear winner! The pancakes fluff up like you want, and you can hide all types of goodness in these ;) Hint - chia seeds, flax and more!
Pro tip - These freeze really well once cooked so make a large batch, freeze in zipper top freezer bags and take out when you want them. Just warm them up in the microwave!
Recipe for Banana Oatmeal Pancakes:
Ingredients Needed:
1 ½ cups rolled oats (may need a bit more to thicken batter)
1 cup unsweetened almond milk
Pinch of salt
2 heaping teaspoons of baking powder
1/4-1/2 teaspoon ground cinnamon
2-3 ripe bananas (2 if large in size)
1 large egg
1/2-1 teaspoon vanilla
1 ½ tablespoons honey or maple syrup
Optional : 1 scoop protein powder, 1/2 teaspoon chia seeds, 1/2 teaspoon ground flax seeds or hemp hearts
Servings Made: 8-9 medium sized pancakes
Time to Prep: 5 minutes
Time to Cook: 10-15 minutes
How to Make:
Mix all ingredients in blender until mixed well. Cook pancakes on hot greased pan or griddle. Top with maple syrup, whipped cream, fresh fruit or whatever you want!
Pro tip - Add some sprinkles or even some chocolate chips to the batter to jazz these up for the kids (or yourself). You can even add a few drops of food coloring to the batter to make them festive and colorful.
