Chili Lime Curry Chicken

This recipe is great for the grill! I usually use chicken breast and cut it into cubes for skewers but you could do it in the air fryer as well. Perfect dish for the summertime and your family gatherings.

Don’t omit the coconut milk in this recipe, it is a must!

Pro tip - shake the can of coconut milk well before using. It separates in the can!


Recipe for Chili Lime Curry Chicken:

Ingredients Needed:

-3 lbs chicken (either breast cut into cubes or pieces)
-1/4 cup coconut milk⁣
-2 tablespoons olive oil ⁣
-Salt and pepper to taste⁣
-2 teaspoons cumin powder⁣
-2 teaspoons each of garlic and ginger paste⁣
-Juice and zest from 1 lime⁣
-1/2 teaspoon cayenne powder⁣
-1/4-1/2 teaspoon turmeric powder⁣
-2 teaspoons Madras curry powder⁣
-1/3 cup plain yogurt⁣

Servings Made: 4-6 servings

Time to Prep: 30 minutes up to overnight for marination time

Time to Cook: 15-20 minutes

How to Make:
Marinate chicken in all the above ingredients for at least 30 minutes up to overnight. Ensure all chicken pieces are coated well and store in fridge covered.

Grill until chicken is cooked thoroughly or air fry at 385°F for 15-18 mins until cooked through. Use a meat thermometer to check for doneness. Time to cook will vary depending on the size of your pieces.

Serve in a wrap, with naan, yogurt, or with rice and salad. ⁣The options are endless! I love this with corn and potatoes.
