Corn Salad
This one is inspired by my big sister as she make a similar salad. Make it a full meal by topping it with some grilled chicken, shrimp or salmon. How great would this be for meal planning? You can make a big batch for the fridge to make weekday meals quick and simple.
Recipe for Corn Salad:
Ingredients Needed:
2 cans corn, rinsed and drained (you could use fresh boiled corn on the cob or roasted corn on the cob also)
1 can black beans rinsed and drained (any other type of beans work well here such as garbanzo or red kidney beans)
1 ½ cups diced grape tomatoes
1/4 cup diced red onion
1/2 of a large green pepper diced and seeds removed
1/3-1/2 of a cucumber diced
Handful fresh cilantro chopped
Juice of 1 lime
2 tablespoons low fat Italian dressing
Cayenne powder to taste
1 ½-2 tablespoons low fat mayo or plain yogurt
Salt and pepper to taste
1/2 teaspoon each ground cumin and paprika
Servings Made: 4-6 servings
Time To Prep: 10 minutes
Time to Cook: Inactive time at least 1 hour
How to make:
Mix all of the ingredients above in a large bowl. Make sure to toss well to coat vegetables evenly. Chill in fridge at least 1 hour or longer if possible before serving. Make sure to toss well and then garnish with fresh lime wedges and fresh cilantro.
