Potato Salad

The dish that I look forward to the most when I go to a potluck or cookout is the potato salad. (Hint hint - always make a potato salad if I’m coming over for dinner!)

I always take a few (heaping) scoops and then go for seconds. I love a simple potato salad and this one is exactly that. Simple to make but always a winner in the taste department.

Pro tip - don’t skip on the pickles or the juice!

Recipe for Potato Salad:

Ingredients Needed:

10-12 medium sized red potatoes ⁣

1/2 red onion diced⁣

1/2 each red and yellow pepper diced ⁣

1 large dill pickle diced⁣

3-4 tablespoons pickle juice⁣

1/4 teaspoon paprika⁣

Salt and pepper to taste ⁣

1 teaspoon dill⁣

1 tablespoon Dijon mustard ⁣

2 tablespoons each mayo and Miracle Whip ⁣(you can use just mayonnaise if you wish)

Optional - cayenne powder ⁣to taste

Servings Made: 10-12 servings

Time to Prep: 15 minutes

Time to Cook: 45-60 minutes (plus 6-8 hours inactive time)

How to make:

Boil the potatoes in a large pot of salted water. When cooked through, drain and allow potatoes to cool down before peeling and dicing them. I like to leave some skin on them when dicing. When potatoes are completed cooled, add all rest of ingredients and toss well to mix.

** Optional: add some chopped up hard boiled eggs!

Store in fridge until ready to serve. If possible, make 6-8 hours ahead of time and stir well before serving.

Pro tip - use fresh chopped up dill if you can. It makes a difference.

Extra pro tip - make sure you put your raw potatoes into the pot of water when the water is cold and not already boiling. Adding your potatoes to a pot of boiling water will actually cook the outside of the potato faster than the inside resulting in undercooked potatoes on the inside and mushy outsides! No good.
