Creamy Garlic Tomato Chicken
This is a simple dish that doesn’t take long to make at all. You could change up the chicken and use jumbo prawns in this dish too. That would be delicious!
If I am being honest, I wanted to make marsala chicken which uses mushrooms in the ingredient list. My mushrooms were completely rotten in the fridge so I had to change up my plan and I was definitely pleased with the result. A delicious recipe came about by accident!
For another meal option using this recipe, serve this chicken over a bed of rice, or with a side of roasted vegetables and crusty bread. I love it over pasta but you do you!
Recipe for Creamy Garlic Tomato Chicken:
Ingredients Needed:
2 large chicken breasts (boneless and skinless)**pounded down to 1/4 inch in thickness
3 tablespoons flour
Salt and pepper to taste
3 tablespoons butter (divided)
1 tablespoon olive oil
1/2 medium onion diced
1/2-1 tablespoon minced garlic
1 can diced tomatoes (14.5oz)
1/3 cup Marsala cooking wine
1/3 cup chicken stock
1/3-2/3 cup heavy cream
1/8 teaspoon thyme
Fresh grated Parmesan (about 2-3 tablespoons)
Cooked rice or pasta to serve with

How to Make:
In a medium bowl, mix flour and salt and pepper (to taste). Place chicken breasts inside bowl to coat evenly with flour mixture and set aside.
Heat up 2 tablespoons of butter and 1 tablespoon olive oil over medium high heat. Use a large fry pan or skillet deep enough to hold chicken. When butter has melted, remove chicken from flour mixture, shake off excess flour and place in heated pan. Cook chicken about 4-5 minutes per side until almost cooked through.
In the same pan, add diced onion, 1 more tablespoon of butter, and minced garlic. Cook for about 2-3 minutes until garlic fragrant and onions soften. Add entire can of diced tomatoes, cooking wine, chicken stock and heavy cream.
Turn heat down to low, stir and simmer sauce for about 15-20 mins. (While the sauce is simmering, you can cook your pasta or rice). Check chicken doneness with a meat thermometer and turn off heat when chicken is cooked throughout. Stir in thyme and more pepper if you wish. Finally stir in shredded parmesan cheese.
Serve over pasta or rice.
