Frozen Banana Bites

I used to hate bananas period. Now, I actually enjoy eating them, unless there is a bruise anywhere on them. I avoid bruised bananas like the plague.

Fun fact about me - I didn’t know how to peel a banana until adulthood. I used to use a knife as every time I tried to peel one, I would mush the tip to the point of disgusting.

Make these bites now and make them your own by changing up the dip and toppings! (Read on for tips)

Recipe for Frozen Banana Bites:

Ingredients Needed:

2 ripe bananas sliced into 1-2 cm slices

1/4-1/2 cup nut butter of choice

1/3 cup chocolate chips *You could use yogurt as well

1/2 teaspoon coconut oil

Optional toppings - chopped nuts, shredded coconut, sprinkles

Servings Made: 16 bites

Time to Prep: 10 minutes

Time to Make: 60-90 minutes including inactive time in freezer

How to Make:

Place banana slices in a single layer on a tray lined with wax paper and freeze slices until solid (about an hour, maybe less).

Remove from freezer and put about 1/2 - 1 teaspoon nut butter in between two slices to make a banana sandwich. Return to freezer for about 20-30 minutes to set again.

Melt chocolate chips and coconut oil together in 20-30 second increments until smooth. Mix well in between. Dip frozen bites into chocolate (you can dip half the bite or the whole thing, or just drizzle) and place back onto tray.

Pro tip - you can dip the bites into yogurt instead of chocolate for a fun alternative!

Bonus Pro tip - add 1/2 teaspoon of hazelnut spread such as Nutella on top of the peanut butter for that little bit of extra deliciousness!

Top with desired toppings such as sprinkles, coconut or chopped nuts. Return to freezer until chocolate is set.

Store in airtight container in freezer.
