Everything But the Flour Mini Muffins

I love having these mini muffins ready to go in the snack cupboard or freezer. The kids love them, they are bite sized and perfect for their little hands.

I would highly recommend getting mini muffin tins if you don’t have them already. There is just something about a bite sized muffin that makes them extra delicious!

Recipe for Everything but the Flour Mini Muffins:

Ingredients Needed:

2 ripe bananas mashed

2 eggs

1/2 teaspoon baking powder

Pinch of salt

Pinch of cinnamon

1 -2 teaspoons vanilla

1 teaspoon honey

1 teaspoon maple syrup

1/2 cup nut butter of choice (I usually use peanut or almond butter)

3-4 tablespoons shredded coconut

Optional - 1-2 scoops protein powder, 1/2 tablespoon chia seeds, 1/2 teaspoon ground flaxseed, 1/4 cup chocolate chips, 1/4 cup chopped nuts

Servings Made: 36-40 mini muffins

Time to Prep: 5 minutes

Time to Make: 10 minutes

How to Make:

Preheat oven to 400°F and grease muffin tins with cooking spray. In a large bowl, mash bananas then add baking soda, salt and cinnamon. Mix with a fork or hand whisk until combined then add honey, vanilla, eggs and maple syrup.

When combined, add nut butter and add ins. I always add coconut, chopped nuts, chocolate chips, chia, flax and protein powder.

Mix and fill muffin tins 2/3 full and bake for about 7-8 minutes until muffins are brown at edges. Cool completely on wire racks.
