Green Chutney Version 2.0
I like to call this version 2.0 as it has all the same ingredients as my original recipe but I have added a few bonus ingredients to amp up the flavors.
Give it a try next time you want a green chutney. I love to serve this version with meats like kebabs, grilled chicken or even fish.
Recipe for Green Chutney 2.0:
Ingredients Needed:
2-3 bunches fresh cilantro washed (leaves & stems)
10-20 roasted unsalted almonds or cashews
5-10 green chili peppers (serrano or similar)
1–2 teaspoons salt or to taste
2 tablespoons lemon juice (fresh is best)
1/4 small onion diced and sautéed in a teaspoon of oil
1/2 tablespoon each garlic and ginger paste
1 teaspoon yellow or dijon mustard
1 teaspoon white vinegar
1 teaspoon mayonnaise
1 teaspoon olive oil or canola oil
3-4 tablespoons water or less to blend
Servings Made: 1 medium bowl
Time to Prep: 5-10 minutes
Time to Cook: N/A
How to Make:
Add all ingredients to a blender and blend until mixed well. Taste and add more lemon, salt and more cilantro if needed to reduce the level of spice.
Store in fridge or freeze for future use. If using from frozen, allow to thaw in fridge for a few hours and mix well before using.
Enjoy!
