Peanut Butter Chocolate Oat Cups

This recipe uses pantry staples to make a healthier version of your favorite chocolate peanut butter cup with an added oatmeal base.

These are baked in the oven, filled with your choice of nut butter and then topped with melted chocolate. All the yummy things….

Pro Tip

You can use any kind of nut butter or peanut butter powder or any kind of chocolate on top to create your own version of these!

Try using almond butter and white chocolate!

 

Recipe for Peanut Butter Chocolate Oat Cups:

Ingredients Needed:

1 ripe banana mashed

100g rolled oats

1 ½ tablespoons flour

2 tablespoons maple syrup

Pinch of salt

1/2 - 3/4 cup nut butter of choice (I like to use PB powder mixed with water but you can use any nut butter)

3-4 tablespoons chocolate chips for melting

1/4 teaspoon coconut oil

Servings Made: 6-8 cups

Time to Prep: 5 minutes

Time to Make: 20 minutes

How to Make:

Preheat oven to 350°F and line muffin tins with liners.

Pro tip - silicone liners work best for this recipe.

Mix mashed banana, oats, flour, salt and syrup together in a bowl until well combined. Place a spoonful of oat mixture in each muffin liner, smooth out and press gently to create a cavity and allow the mixture to go up the sides of the liner.

Bake for 12-15 minutes. Cool completely, then place 1-2 tablespoons of nut butter in each cavity.

Melt chocolate with coconut oil in 20-30 second increments in microwave. Mix well and pour on top of peanut butter layer.

Place in fridge or freezer until set.
