Banana Mug Cake

Have you ever made a cake in the microwave in under 2 minutes? I have and it is delicious. These individual cakes are made with a mashed banana for sweetness. I love adding some sprinkles to make them funfetti cakes but you can change up the add ins for a new cake every time! (see recipe below for tips)

These little cakes are perfect for that late night sweet craving, or even a quick bedtime snack for the little ones. Watch this video to see how fast you can make these.

If you want, you can even top them with a scoop of ice cream or vanilla yogurt.

Pro Tip

Add some cocoa powder or even chocolate chips to the batter before cooking to make this a chocolate mug cake!

 

Recipe for Banana Mug Cake:

Ingredients Needed:

1/2 ripe banana mashed

1/4 - 1/2 teaspoon vanilla

2 tablespoons flour

1/4 teaspoon baking powder

Pinch of salt

Optional add ins (add into batter mix) - chopped walnuts, pinch of cinnamon, 1/4 teaspoon sprinkles, 1 teaspoon chocolate chips, 1/2 teaspoon cocoa powder, honey or stevia to taste, 1-2 teaspoons peanut butter or peanut butter powder

Optional toppings (add on after mug cakes cooked) - fresh fruit, yogurt, sprinkles, ice cream, whipped cream

Servings Made: 1 individual mug cake

Time to Prep: 1-2 minutes

Time to Make: 1-2 minutes

How to Make:

Mix all ingredients with a hand whisk or fork in a microwave safe bowl. When combined, fold in any desired add ins.

Pro tip - Make sure the bowl is not too small or the cake will explode out the sides.

Microwave for 80-90 seconds until cake is done and batter no longer sticky. Time to cook may vary depending on your microwave.

Allow cake to cool down before digging in. Top with fruit, yogurt or ice cream, or eat as is.
