Pistachio Pomegranate Puddles
If you have leftover chocolate chips from baking (does anyone ever have extra chocolate??), make these little chocolate puddle snacks. They are really versatile, you just add whatever nuts and toppings you want. Hint hint - pantry clean out!
No bake, 3 ingredients, and perfectly snackable. I love how festive the color looks for the holidays too!
Pro tip - if you don’t like peeling your own pomegranates, you can get them pre done at most supermarkets in the produce section (for a pretty penny I might add!)
Bonus Pro tip - try to make these healthier with yogurt drops (any flavor) and freeze them for a yummy treat.
Recipe for Pistachio Pomegranate Puddles:
Ingredients Needed:
1/4 cup chocolate chips (any kind - dark, milk or white)
1/8 teaspoon or less coconut oil
Toppings of choice - I use about 2-3 chopped pistachios per puddle and 4-5 pomegranate arils (seeds) per puddle.
Servings Made: about 15-20 puddles
Time to Prep: 5 minutes
Time to Cook: No cook time. Inactive setting time in the fridge for at least 30 minutes until set.
How to Make:
Melt chocolate in microwave with coconut oil in 20-30 sec increments until melted. Stir well in between. Be careful not to burn!
Pro tip - make sure your bowl is completely dry and no water drops get into the bowl or the chocolate will become grainy and not smooth.
Drop about a teaspoon of melted chocolate onto a parchment or wax paper lined baking tray. Top with some nuts and pomegranate seeds (or any other toppings you wish).
Place tray in freezer or fridge to set. Remove puddles and place in airtight container in the fridge. If you used yogurt, keep them in the freezer.
