Small Batch Miami Muffins

I call these Miami muffins as the recipe I use was one I adapted from my best friend who lives there. I couldn’t think of a better name to call them so they became Miami muffins.

These muffins are made with almond flour so if that is your jam…these are perfect for you! If almond flour isn’t your favorite, I encourage you to give these a try…you may change your mind!

Change up the add ins for this recipe and you will get a new muffin every time! Nuts, cranberries, coconut, flax, chia seeds, chocolate chunks or even blueberries would work well.

Pro tip

Before baking, place a few more chocolate chips on top of each muffin to get extra sweetness in each bite!

 

Recipe for Small Batch Miami Muffins:

Ingredients Needed:

1 egg

1 ripe banana mashed

1 cup almond flour

1/2 teaspoon baking powder

1/2 teaspoon cinnamon

Pinch of salt

1 teaspoon vanilla

1/2 tablespoon brown sugar

1 ½ tablespoons milk (any kind should work well. I use whole milk)

1/4 cup chocolate chips

1 tablespoon unsweetened shredded coconut

2 tablespoons chopped nuts (I usually use pecans or walnuts)

Other optional add ins - chia seeds, flax seeds, dried cranberries

Servings Made: 4-5 muffins

Time to Prep: 5-10 minutes

Time to Cook: 20-25 minutes

How to Make:

Preheat oven to 350°F and line your muffin trays with disposable or silicone liners. You can use mini muffin pans or regular sized ones. The baking time indicated is for regular sized muffins, so you will need to decrease your baking time if you make minis.

Mix egg and banana with a fork in a medium bowl. You can also use a hand whisk. Add in almond flour, salt, cinnamon, baking powder and vanilla. Mix until well incorporated then add milk and sugar. Mix until just combined.

Fold in the chocolate chips, coconut and nuts (and any other add ins you chose to use), mix until just combined.

Pour or scoop muffin batter into lined muffin trays until about 2/3 full.

Bake for 22-25 minutes until browned on top and a toothpick inserted in centre of muffin comes out clean with a few moist crumbs on it.
