Fresh Strawberry and Cream Cake
This cake is simple to make and tastes amazing. So fresh and delicious. My son and I made this cake together for my Mom’s birthday!
We used a vanilla box mix to make the cake, and my homemade whipped cream recipe. He did pretty much all the icing and decorating on his own. No fancy equipment needed.
You can really use any recipe you want for the cake. Bake as many or as few layers as you wish. You can also make this even simpler to create by using Cool whip for the frosting.
Pro tip - If you don’t have a piping bag, make one! Fill a large freezer bag with your whipped cream topping, cut the bottom tip off and use that as a piping bag. It works perfectly. Just make sure it is a strong freezer bag or it may split at the seams making a sizable whipped cream mess.
Recipe for Strawberry and Cream Cake:
Ingredients Needed:
1 box vanilla cake mix
1 container (500mls) heavy whipping cream or 1 large cool whip container defrosted in fridge
4 tablespoons powdered sugar
1 teaspoon vanilla
Fresh strawberries cut up into slices for topping and in between layers
Servings Made: 6-8 servings
Time to Prep: 10 minutes
Time to Cook: 30-40 mins plus decorating time
How to Make:
Bake cake layers as per box or recipe instructions. I usually make two 6 or 8 inch round cakes and then cut them in half once baked to get four thin layers about 1 inch each in height.
You can use any size pan you would like, just adjust baking time as per recipe directions. (Sheet cake, 8 inch rounds, square pans, shape pans, or even cupcakes).
When cake layers are baked, cool in pans for about 15 minutes, then remove from pans to cool completely on wire racks.
Meanwhile, make your whipped topping. Mix heavy whipping cream and vanilla with powdered sugar in a large bowl with an electric mixer for a few minutes until stiff peaks form.
Pro tip - Speed up mixing the whipped topping by freezing your bowl and mixer attachments for 30 mins prior to mixing.
Assemble cake by placing first cake layer down, topping with whipped cream and a layer of fresh strawberries. Repeat process until all cake layers done and finally top with more whipped cream and decorate with strawberries.
Store in fridge until ready to serve.
