Potato Waffle

Think crispy crunchy potato outside, and soft cheesy inside. That is what this potato waffle turns out like.

Nothing fancy about this recipe, just a good old boiled potato smushed up with oozing cheese. It sounds a bit weird. I get that, but it is delicious and a neat way to cook a potato! Although, is there a wrong way to cook and eat a potato?? I think not.

Make this a fun dinner for the family by laying out toppings like sour cream, chives, butter and cheese for everyone to choose from. Make it a full meal by topping these waffles with ground beef!

Recipe for Waffle Iron Potato:

Ingredients Needed:

1 small or medium potato boiled with skin on

1-2 oz grated cheese

Salt and pepper to taste

1/4 teaspoon garlic powder

Optional toppings - parsley flakes, chives, grated cheese, sour cream, salsa, ground beef, jalapenos, butter

Servings Made: 1 potato

Time to Prep: 5 minutes

Time to Make: 25-40 minutes depending on the size of potato (larger potatoes will take longer to prepare)

How to Make:

Boil potato in pot of salted water until cooked through. Drain water and allow potato to cool slightly (about 10 mins).

Place cooked potato on a greased hot waffle iron (you can brush some butter on the top and bottom waffle plates). Gently close iron to flatten the potato. Open iron and place grated cheese on potato and close iron again to allow potato to crisp up. This may take 5-6 minutes depending on the size of your potato and type of waffle iron. You can open the waffle iron to check doneness. You want the cheese to be fully melted and starting to crisp up around the potato.

Using tongs or a fork, carefully remove potato waffle when done to your liking. Top with garlic powder, salt and pepper as well as rest of desired toppings.
