Chocolate Waffles

Anyone else breakfast fans like me? I could seriously have breakfast food at anytime of the day. I can never decide between savory and sweet so I always do a mix of both. These waffles are a great addition to your breakfast or brunch rotation. They have added spinach in them too but you don’t need to tell anyone that ;)

Don’t worry about the spinach in them, I swear you can’t taste it but you get all the great health benefits from it. I love these topped with good old maple syrup and fruit, but my kids love them topped with peanut butter and bananas. Great combo to try!

Pro top - These freeze really well so make a large batch and freeze them for quick and easy meals in the morning. Just pop them in the microwave to heat up.

Recipe for Chocolate Spinach Waffles:

Ingredients Needed:⁣

1 handful fresh spinach

1/4 cup maple syrup

4 eggs

3/4 cup peanut butter or other nut butter

1/3 - 1/2 cup cocoa powder

1 ripe banana

1/2 teaspoon baking soda

1/2 teaspoon vanilla

Pinch cinnamon

Optional - 1/2 scoop chocolate protein powder, 2 tablespoons honey

Servings made: 4-6 servings

Time to Prep: 5 mins

Time to Cook: 15 mins

How to make:
Add all ingredients into a blender and mix until well combined (about 1-2 mins on med-high speed). Pour about 1/4 - 1/3 cup of batter into heated, greased waffle iron and cook over medium high heat until done. The time to cook varies between different waffle iron brands.

Remove waffles and serve with berries, nut butter, syrup or even whipped cream.

Best if served immediately. You can also allow them to cool completely and then put into large air tight freezer bags and freeze.
